CHEESECAKE DE CALABAZA PARA FILM & FOOD / PUMPKIN PIE CHEESECAKE FOR FILM & FOOD

Scroll down for the recipe in english

PUMPKIN PIE SPICE MIX
1/2 cucharadita canela
1/4 cucharadita jengibre
1/8 cucharadita allspice
1/8 cucharadita nuez moscada

The challenge for Film & Food this month was about halloween. With the famous saying "trick or treat?" it was up to us whether we wanted to publish a recipe and dedicate it to someone who owns a blog as a treat or whether we dared to let the girls from Film & Food decide for us and choose a recipe that we would have to produce. I chose the last one and this is the result:

PUMPKIN PIE CHEESECAKE

Ingredients:

18 bourbon biscuits (oreo or any chocolate biscuits would do as well)
2-3 tbsp melted butter
600g philadelphia cheese
165g sugar
1 tin pumpkin solid packed
1 tbsp pumpkin pie spice (see NOTE)
3 eggs
250ml sour cream
100g chocolate bar (dark or milk chocolate)
2 tbsp double cream
1 tsp butter

Method:

Preheat oven at 160C/gas3. Grease and line the base and edges of a 9inch round tin. Put the biscuits in a food processor and pulverize them. Add the melted butter. Press the crumbs firmly onto the bottom of the pan and set aside.

Beat the philadelphia cheese and sugar on medium speed. Add the pumpkin and spice and mix well. Beat in the eggs one at a time and pour the mixture over the biscuit crust. Bake in the oven for 50-55 mins or until the center is almost set. Cool slightly, run a knife or spatula around the rim of the pan and carefully spread the sour cream over the top of the cheesecake. Let it cool completely.

Melt the chocolate with the cream and butter and drizzle over the cheesecake in a spiral pattern starting from the center to the edge. Pull a toothpick through the lines from the center to the edge like if you were marking the portions. Put it in the fridge for at least 4 hours before serving.

NOTE:
If you can't find the spice you can make it at home. Although the quantities I am going to give you makes only 1 tsp, you can multiply them by 3 and you'll get a tablespoon.

PUMPKIN PIE SPICE

1/2 tsp ground cinnamon
1/4 tsp ground ginger
1/8 tsp allspice
1/8 tsp nutmeg

Mix them well and you have you pumpkin pie spice.

This recipe came to me one afternoon while dinking my tall caramel latte at starbucks. I was thinking about which recipes I could come out with to celebrate halloween and this was one of the results. The other ones will follow shortly:

GIANT BURGER SHAPED AS A PUMPKIN

Ingredients for the dough:
500 g strong bread flour
10g salt
10g yeast
350g warm water

Ingredients for the burger:
250g mince meat (of your choice, mine was turkey mince)
2 slices of bread
1 egg
1 garlic clove
4 tbsp milk
parsley
salt
pepper

Ingredients to asemble the burger:
1 onion sliced finely
2 tbsp olive oil
1 tbsp dark brown sugar
ketchup
mustard
4-6 slices of cheese
1 egg, beaten

Method:

First we start with the dough. In a bowl we mix the flour and salt. Measure the water in a measuring jug and add the yeast. Let it rest for 10 mins and then add it to the flour. Mix the ingredientes with your fingers until it all comes together and put it on a floured suface to start kneading. Do this for 10 minutes. Put the dough in a greased bowl, cover with cling film and a tea towel and let it rise for 1 hour in a warm place.

Meanwhile we preheat the oven to 200 degres, gas mark 6. Heat up the oil in a frying pan and add the onion, a pinch of salt and the dark brown sugar. Let it cook until the onion turns brown and soft. Reserve it.

In a bowl we put the slices of white bread without the crust, add the milk and let it soak. Add the rest of the ingredients for the burger and mix it with your fingers. Set aside.

Put the dough in a floured surface and divide it in half. Roll one half trying to shape it as a circle and put it in a tray. Pour some ketchup, mustard and spread the onions leaving 1-2 cm border around the edges. Roll the other half of the dough, put it in a tray and leave it in the freezer for 10 mins, this will help when it comes to cut the face. Grease the surface and your hands and shape the meat into a circle. Put it over the onions making sure you're still leaving the 1-2 cm edge. Cover it with the slices of cheese.

Take the dough from the freezer, cut the eyes, nose and mouth and cover the meat. Press the edges together and with a knife cut a round shape if you didn't manage to shape the bread as a circle. With the left overs of the dough make the stem and add it to the pumpkin.

Brush it with egg and cook it in the oven for 30-40 minutes or until brown. Let it cool a little bit over the wire rack and cut it in triangles (like the pizza).
